Our vision of a fine wine from Provence

From Marcel to Jean-François Ott, four generations have followed one another at the helm of the estates, each with a unique vision of winegrowing and winemaking.

Each generation has conscientiously continued the responsible practices, combining these with innovation and research work. They have sought to maintain the right balance between tradition and modernity, rooted in a responsible and sustainable approach. In this constant quest for quality, and with all the humility that comes with working in contact with Nature, Domaines Ott has continued to explore and refine its knowledge of each of its three terroirs, some of the finest and best-preserved in Provence.

Every decision is made with the ultimate goal of preserving the vitality of our soils, revealing the authenticity of our terroirs and producing the finest wines from Provence.

A NATURAL VITICULTURE

Worked with respect for the soil and the vine, the three estates are a superb example of natural viticulture. Each plot of vines, laid out in terraces or “restanques” and tended with infinite patience, is the ideal environment for the cultivation of grapes rich in flavour, the key ingredients in the creation of fine wines. A well-choreographed ballet of long fallow periods gives the soil the time it needs to replenish and regenerate.

WORKING BY HAND AT EACH STAGE OF THE WINEMAKING PROCESS

In this relentless pursuit of excellence, every detail counts. About 40 men and women work hard every day tending our vines. Their meticulous and measured work embodies the know-how passed down from generation to generation, backed up by a constant capacity for innovation. From the planting of the vines to the gentle pruning, disbudding and harvesting, all the work is done by hand, with the utmost respect for the natural rhythm of the vine.
Our commitment to excellence is also reflected in the time we spend in our vineyards: 600 hours of work per year for each hectare of vines, compared to an average of 200-300 hours per hectare in Provence. Over the course of its annual cycle, each of our vines will have been checked or worked on by a member of our team 47 times. This commitment to the constant, careful monitoring of each plot of vines ensures that its needs are met as quickly and effectively as possible.

MINIMAL INTERVENTION BUT THE HIGHEST STANDARDS IN WINEMAKING

At Domaines Ott, winemaking is a natural extension of the meticulous work carried out in the vineyards and is an ode to all our Provençal terroirs. Under the expert and watchful eye of our cellar masters, our minimal intervention but extremely rigorous work is designed to preserve the soul of the fruit, its purest expression. Temperature control, gravity processes, and long ageing periods all contribute to the excellence and unmistakable character of the wines from Domaines Ott.
