Château de Selle was the first estate acquired by Marcel Ott, in 1912. It is located in Taradeau, on the high limestone hills in the heart of the Var countryside.

The cellar boasts a contemporary architecture that seamlessly blends into its landscape and advanced technology to carry out high-precision vinification work. This technology includes gravity-fed processes, small vats adapted to the size of each vineyard plot, stainless steel vats, oak foudres and barrels and spherical ceramic containers to enable the wines to refine gently over time.

The vineyards are laid out in “restanques” and terraces on very stony soils containing gypsum, sandstone and red clay, which allows the vineyards to be worked homogeneously. Complete mastery of this arid-looking terroir results in a rosé and a red wine that are elegant, well-balanced, ethereal and mineral.

Vieux Marc de Rosé

Confidentiel, ce vieux marc de rosé renoue avec une tradition provençale amorcée au domaine il y a plus de 70 ans. Doté du statut de « bouilleur de cru », le Château de Selle possède son propre alambic, lui permettant de maîtriser toutes les étapes d’élaboration de l’eau-de-vie. Le marc de raisin, issu du pressurage du vin rosé dont il reste les peaux, les rafles et les pépins, est ainsi distillé ; n’est retenu que le cœur de chauffe, soit les alcools les plus nobles et les plus parfumés.
