Being a native of Alsace, Marcel Ott preserved throughout his lifetime a taste for the simple, the wholesome, and the genuine: respect for nature became and has ever remained for the many years thereafter, the golden rule on which the fourth generation has continued to build, day after day, the renown of Domaines Ott*. These principles have never changed.
In working the earth :
- crushing the largest rocks to prepare the land for ploughing, yet preserving the same balance of stone,
- use of nature fertilisers,
- machine weeding.
In training the vine :
- use of a special vinestock (the 3,309 variety) for small yields and wines with finesse,
- wire-type training for grapes that are well-aired and drenched in sunlight,
- manual de-budding for restricted volume yields,
- simple, time-proven treatment for oidium and mildew.
In vinification and ageing :
- hand picking, strict sorting, delicate pressings,
- totally free of chemicals,
- use of wood for fermentation and ageing. |
